Lots and Lots of Zucchini

My parents have a good sized garden and grow a variety of vegetables. My dad brought over a bag full of giant zucchini. This picture doesn't do them justice, they are huge! I will be making a variety of zucchini recipes for awhile!



I have since turned one and a half of those zucchini into 6 loaves of bread. I still have 3 more to go, and they are the biggest ones!

New Recipes

This summer I have been trying new recipes. It has been fun to try new things and I have to say some of them have been quite delicious! I look forward to trying new things. I will post the ones I recommend!

I made Zucchini Chocolate Chip Cookies that was in a book I read (Hannah Swenson mysteries). The recipe is posted on this blog. I took these to a pool party and they were very popular. They don't look like typical cookies when you take them out of the oven, they are more "cakey" in the words of my good friend Jenn!



I made Pineapple Chicken Sliders and I absolutely LOVED these! http://allrecipes.com/recipe/grilled-chicken-pineapple-sliders/detail.aspx I will use the marinade just on its own. I didn't use the teriyaki but I think it was good without it. I highly recommend this recipe! It is one of the best chicken marinades I have had. I only used 1/2 tablespoon of the apple cider vinegar though.

Zucchini Cookies



Zucchini Cookies
A Hannah Swenson Recipe
Yields: 8 dozen cookies
1 cup granulated sugar
1 cup brown sugar (packed tightly)
1 cup softened butter (2 sticks)
1 teaspoon baking soda
2 large eggs beaten
1 ½ teaspoons vanilla
1 ½ cups peeled and shredded zucchini (that’s about three 8 inch zucchini)
1 cup chopped walnuts (or pecans)
6 ounce bag chocolate chips (1 cup)
4 cups all-purpose flour (don’t sift, pack it down in the cup when you measure it)

1.) Measure out the white sugar and the brown sugar in a large bowl. Add the softened butter and beat with a wooden spoon until the mixture is nice and fluffy.
2.) Mix in the baking soda and make sure it’s evenly distributed.
3.) Beat the 2 eggs in a glass with a fork and then add them to your bowl. Add the vanilla extract and mix everything thoroughly.
4.) Peel the zucchini. Shred them with a cheese grater. Measure out 1 ½ cups, packing it down in the measuring cup, and then add it to your bowl.  (peeling zucchini avoids green cookies)
5.) Stir until the shredded zucchini is thoroughly incorporated.
6.) Add the chopped nuts and the chocolate chips. Mix well.
7.) Add the flour in one-cup increments, stirring after each addition. When all the flour has been added and stirred in, the resulting dough will be quite stiff.
8.) Drop by teaspoonfuls onto a cookie sheet that has been sprayed with nonstick cooking spray or lined with parchment paper.
9.)  This dough is soft. If you find it’s too difficult to work with, chill it for 20 to 30 minutes in the refrigerator and then try again. I used a 2-teaspoon cookie scooper and dipped it in water every three scoops or so.
10.) Bake the cookies at 350 for 10-12 minutes or until lightly browned.
11.) Cool the cookies on the cookie sheet for two minutes, and then remove them to a wire rack to cool completely.

12.) After these cookies are cool, you can store them in a covered container and they’ll keep very well that way.

Fall Cooking

I have made 2 recipes from Pintrest that I would highly recommend! The first one is a chex-mix. I bought pumpkin spice Hersey Kisses (Target and Walgreens have them). I then melted an entire pack over the stove (like a double broiler). Pour the melted kisses in a plastic bag and mix with rice chex. Then pour powdered sugar over the mixture and shake. I then added pretzels, peanuts, M&M, Reeses Pieces, and Candy Corn. It was so addicting!!!

These were fun to make! Make the cookie dough just like you do for peanut butter blossoms. Put a scoop full in a mini muffin tray and push a mini Reese Peanut Butter Cup in the middle. Then bake for 8-10   minutes at 350 degrees. I used mini muffin paper in the bottom but it also works without the paper (I tried both ways and thought it looked better with the paper).

Zucchini Bread

My mom has a big garden and gave me a zucchini from her garden. She was planning on giving me more but many of the plants are dying due to the lack of rain, which is very sad. I made 4 loaves of zucchini bread with the gigantic zucchini from her garden. I made 2 loaves of chocolate chip zucchini bread using Paula Deans recipe http://www.foodnetwork.com/recipes/paulas-home-cooking/chocolate-chip-zucchini-bread-recipe/index.html. I highly recommend this recipe! I also made 2 loaves of blueberry almond zucchini bread using another Paula Dean recipe http://www.foodnetwork.com/recipes/paula-deen/zucchini-bread-recipe/index.html . The recipe doesn't call for blueberries or almonds but my mom said she added blueberries once and it was good so I tried that. I had almonds at the house so I used those instead of buying the nuts in the recipe. I recommend both of these recipes. I like to bake and have the time in the summer so it was really enjoyable to make these loaves. Plus my house smelled fantastic!
